Wild Rice With Dried Cranberries

Serves 2

Prep Time: 10 Minutes

Cooking Time: 30 Minutes

1 teaspoon olive oil

1/4 cup finely chopped onion

1/4 cup finely chopped carrot

1/4  cup finely chopped celery

1 garlic clove, minced

1/2 teaspoon dried thyme

1/4 cup dried cranberries

1 cup low-sodium chicken broth

3/4 cup wild rice, rinsed under cold water

Heat olive oil in a medium saucepan. Add onion, carrot, celery, and garlic, and saute’ until softened. Add thyme, dried cranberries, and broth.

Add rice to the vegetables and cook according to rice package directions (about 30 minutes). Serve as a side dish with a Cornish game hen.
